Quick Dinner...

I did my spin on breakfast for dinner.  I made hard-boiled eggs, salmon pate, and potato latkes with blackberry jam.  It turned out well.  If I make it again, I'd like to add fresh fennel fronds and green onions as a garnish, substitute smoked salmon for canned salmon, and add a dollop of sour cream lightly sweetened with a pinch of brown sugar.
