Quick Dinner...

For dinner I whipped up some coconut rice and a stir-fry.  I love coconut rice.  It's so fragrant and lies directly on the border between sweet and savory.  Not to mention, it's so easy to make!  I added bacon to the stir-fry and cooked the beef in a maple syrup and chili glaze.

I've never heard of coconut rice - it sounds so great! How do you make it or is it a special rice you buy?

Hey Lynn! It's usually a Thai thing. I'm not certain how they make it, but I just go about making rice as usual, but add shaved coconut to the rice and water. Even though I know it's bad, sometimes I add a spoon or two of raw organic coconut oil. After it's ready, I fluff it with a fork and add a dash of salt.

Thanks - I had wondered if you cooked the rice in coconut milk rather than water!

There's a dessert like that or nearly like that. It's called bibinka. It's YUMMY too!
