
After settling in for the evening, I realized that I was famished. Everything was pretty much closed, so I had to take the time I normally wouldn't have to make something for myself. I ended up making this egg dish with
caramelized onions, sun-dried tomatoes, sauteed mushrooms, white cheddar and smoked salmon. With this very
breakfasty dish, I had some left-over champagne. It hit the spot in a way I can't fully describe.
