I garnished the plate with the last of the bell peppers from our garden. I'm a little sad that garden is almost done. There's a few cabbages and cold weather vegetables hanging on, but for the most part it is all cleared. I am eager for spring again and the beautiful bounties that come with it.

Dinner...
For dinner last night, I made pork chops and a wild mushroom risotto. The pork chop was good, but the risotto was truly a thing of beauty. I think it has to be one of my all time favorite foods. There's something about a risotto done right. Perhaps it's that silky, creamy texture, or the warm blend of savory flavors. It's earthy, rich, and aromatic all at once – a perfect comfort food for a chilly evening.
