Earl Grey Brownies...

The winter brings with it a focus on home.  I find that this time of year, I'm more inclined to make soups and bake in the kitchen.  As evidence of this, I recently whipped up a pan of Earl Grey Brownies.  I was introduced to these by a friend named Monica.  I was thinking of her recently and thought that I'd make a batch.  The sweetness of the brownies is cut by the bitterness of the tea and punched up with floral notes of the bergamot.  The orangey flavor pairs well with the dark chocolate.  I like to portion the relatively "dry" brownies small and layer on a thick frosting.  What a fine wintertime treat!

I never even considered mixing earl grey with chocolate until I found some tea that did it for me just the other day. These sound fabulous!

Besides cooking with matcha green tea powder (which I've experimented with and had good results), I've not cooked much with tea. I went to an Australian restaurant once and they had marinaded a cut of meat with concentrated tea. And I heard once of a Japanese steakhouse using tea in their spice rub.

I found this super smoky tea called, lapsang souchong, and it might be good for poaching fish. If it was salmon it'd give it the same flavor profiles as salmon cooked on a plank.

Tea is used in several fruit cake recipes here! Famous Welsh bara brith has the fruit soaked in tea but not anything special. I might try with some speciality teas to see what the resulting flavours might be like. I think those brownies look delicious. Mmmmmmmmmmmm! I would also love the recipe,please! xx
